" Hello Queen of the Universe, Veggie food is only as boring or bland as you let it be. One night when my family was not interested in going out into the cold rainy world, we decided to use what we had on hand for dinner, my daughter looked in the food closet,than at some cookbooks, and recreated a dried black eyed pea soup from and old cook book that was one of the best tasting soups I have everhad. Rich tasting, filling and only using what was at hand. Now we have a weekly challenge, take just basic staples and create a new dish with them. Each of us takes turns with basic staples and creates something we have never tried before. Looking at old cookbooks can be fun, converting recipes to veggie. Saves money and gives everyone a chance to be creative. Never give in and do the same ole same ole each time. Of couse we keep such basic staples as a variety of dried beans, crushed tomatoes, canned vegetables, veg soup stock cubes, fresh onions, different pastas, rices and such. There are alot of great recipes here at this site, I don't think we eat the same thing twice in three months unless it is because everyone votes to. I always make up my weekly menu plus a couple of extra days and if anyone has a request they can add it then.
