Yesterday I put together the Mexican Manicotti and let it refrigerate over night as the recipe required. Kind of feels good to know it is all ready to just pop in the oven later today. I didn't find any Yves veggie ground at the store I happened to be in so I used MSF crumblies instead. They only come in a 12 oz. package, but even so, when mixed with the onion and refried beans and spices, I had plenty of " filling " to stuff in the uncooked pasta shells. Even though this recipe calls for sour cream and cheese topping towards the end of baking, I plan to skip that step. I may just supply those items on the table for the others to choose to add and in that way keep the main recipe vegan.
