I use the one on the back of the Hershey's Cocoa can. I use 1 cup of

chocolate soymilk instead of the milk and it comes out VERY VERY

chocolatey, moist and good. Usually I only make 1/2 recipe as I make

cupcakes for my son's lunch, and this recipe is easy to cut in half.

 

Hershey's " Perfectly Chocolate " chocolate cake

 

2 c. sugar

1 3/4 c. flour

3/4 c. Hershey's cocoa

1 1/2 tsp. baking powder

1 1/2 tsp. soda

1 tsp. salt

2 eggs (or equiv. egg substitute)

1 c. milk (or choc. soymilk, see note above)

1/2 c. vegetable oil

2 tsp. vanilla

1 c. boiling water

 

Heat oven to 350 and grease/flour 2 9-in. pans. Combine dry

ingredients in large bowl. Add eggs, milk, vanilla; beat on medium 2

min. Stir in boiling water. (batter will be thin). Pour into pans,

bake 30-35 minutes until wooden pick inserted in center comes out

clean. Cool 10 minutes, romove to wire racks to cool compleely.

 

For Cupkakes: Fill cops 2/3 full of batter, bake @ 350 for about 22-

25 min. Makes around 30.

 

 

They have a " Perfectly Chocolate " frosting to go with it, but I can't

vouch for it, I haven't made it. We just don't seem to care for

frosting much here.

 

Perfectly Chocolate frosting

 

1 stick butter/margarine (1/2 c.)

2/3 c Hershey's cocoa

3 c. powdered sugar

1/3 c. milk

1 tsp. vanilla

 

Melt butter, stir in cocoa. Alternately add powdered sugar and milk,

beating on medium until spreading consistency. Makes about 2 c.
