[recipe] Salsa Pinto Beans ~ vegan

This is fast and so easy. You can adjust the seasonings

to suit your palate and sub in another variety of beans

if you like. Only takes 15 minutes to throw together.

 

Salsa Pinto Beans

 

1 small onion

1 garlic clove, minced

2 tsp minced fresh cilantro or parsley

1 Tbs olive oil

2 cans (15 oz each) pinto beans, rinsed and drained

2/3 cup salsa

 

In a large skillet or saucepan, saute onion, garlic

and cilantro in the oil until tender. Stir in beans and

salsa; heat through. Yield: 6 servings
