It's so secret it can't even be described on these pages -- except to say that it will be spicy. How spicy, though, is up for debate right now. On this warm day in January, Ian Gaffney, one-half of Ithaca's one-and- only raw, vegan and gluten-free treats company, is carefully spooning cayenne and chili into a mixer as the machine paddles the coconut, agave nectar, almonds and spices together into a sumptuous mass of sticky, raw goodness.
