( author of " The 80/10/10 Diet) I know that some raw food " experts " have a contrary position from Dr. Graham. However, hearing him build a logical case for low fat and simplicity in diet is most impressive. This is a taste of his conclusions: He explained how anything above 10% fat ( as a percentage of calories) causes " predictable health decline " manifesting as,e.g., digestive disorders, candida, heart disease, blood sugar problems, chronic fatrique, etc. " As the fat in diet goes up, the uptake, transport and delivery of both oxygen and fuel for the body goes down. " This is why athletes are enjoying such positive results going toward " 80/10/10 " , as you can imagine just how important it is for athletes ( and everyone) to get a well functioning supply of oxygen and fuel to theirs muscles, organs and cells in general.
