Guest guest Posted June 8, 2009 Report Share Posted June 8, 2009 Hi Cheryl, There are lots of foods (or other versions of foods, such as " organic " vs. conventional) that I'd like to list for comparison, but I'm restricted by reliable (?) sources of analysis. I use the extensive National Nutrition Database from the USDA. They have a lot of information, but still have plenty of room for improvement. Fresh (raw) vs. cooked/pasteurized is information I wish they had more information on. I was interested in having a shorter table with foods and their raw vs. cooked data. I wasn't finding clean data for the comparison. I could find raw vs. " canned " , etc., which adds more factors, including added salt, etc. I gave up for the time being, but will likely revisit the idea at some point. The chart certainly couldn't do justice to raw food, but may offer some insights to people looking (suspiciously) at raw foods with an analytical eye. I suspect there is too much going on in the foods that we don't know about or nutrients we haven't discovered yet or don't understand, so the chart, with it's limited data, wouldn't adequately reflect the benefits of raw foods.
