Guest guest Posted March 11, 2009 Report Share Posted March 11, 2009 If the law is overturned it may become easier to buy unpasteurized almonds, but I believe the majority of almonds (organic and conventional) will continue to be pasteurized, even after it is no longer mandatory. The machinery that is used for the pasteurization process is expensive, and it has already been purchased and is in place. Processors will continue to use it because the #1 motivation for pasteurization -- risk management -- will not go away even if the mandatory pasteurization law does. Fundamentally, it not the evil almond industry or the government (this from a libertarian/anarchist) that is to blame for our choice of eating raw being taken away from us, it is the unquestioned yet false idea that bacteria cause disease. The four people who got sick after eating " tainted " almonds did not become ill because of bacteria. They got sick because they made hundreds of health-destroying diet and lifestyle mistakes throughout their lives and even during their illnesses. And just like everybody else in our culture who gets sick, they didn't have to look far for a scapegoat when they came down with symptoms. They were able to get a judge to agree with them that the entire burden of their mistakes should be borne by the almond industry and the unfortunate farmers who grew the nuts in question. The rest is history, as they say. The industry responded exactly has it had to, with mandatory pasteurization. This being the unfortunate case, I'm afraid all we have to look forward to in the future is more and more sterilization, at all cost, even at the cost of destroying the food. The only way we're ever going to get our choices back is to take every opportunity to get people thinking critically about the fatally flawed germ theory of disease. Disease is not something that attacks us from the outside, it is a long, slow, cumulative process that happens over time as a result of our unhealthful diet and lifestyle choices. Until the day we're able to get people accepting this and taking responsibility for themselves, our choices and rights will continue to disappear. In the meantime, we who know the truth about how important it is to eat healthfully have to be creative. I buy large quantities of almonds at harvest time and I either transport them myself or hire a private carrier. They are organic and are not fumigated so after I get them home I freeze them for 24 hours. This is the least harmful way to kill worms, which, if present and left intact, can eat and reproduce their way through an entire shipment of almonds. After the short freezing period, they are double bagged and stored in refrigeration, which keeps them fresh for a year. My almonds are not only certified organic, they are unpasteurized, properly stored (this is very important and nobody else guarantees it) and cheaper than any other source I'm aware of.
