They seem to last quite a while in the fridge (I kept mine covered with a nut milk bag or cheese cloth, etc.). Taste is true test. I wouldn't tell you yes or no. 3-4 weeks may be a bit longer than I've had it, but since it is cultured, it's not like it's going to get much worse! Think about actual cheese (from bovine mammary secretions): it can be aged for months, developing some dangerous looking mold, then they just cut off the outside. I have had some cultured almonds, etc. that looked a bit funky, so I scooped off the top layer and it was fine underneath. How daring are you?
