So far, I've made pumpkin seed pate, curried pumpkin soup, and am getting ready to create some sort of dehydrated pumpkin cookie. Anybody else?? Guest guest Posted November 1, 2008 Report Share Posted November 1, 2008 I just discovered that pumpkin will produce juice (without having to go through the trouble of peeling), so I'm juicing it with apple and adding the regular pumpkin pie spices. It's tasty. I'll probably go to goneraw.com and look for other recipes. Since I've been on a CSA, I've received lots of different squashes, so this will be a good resource for some of the same things you've made. Does anyone have a fast way to peel the hard squashes and pumpkins? I used to soften the skin by baking when I used to cook, but now the only way I've discovered is to freeze sliced pieces and then cut the meat out when it's thawed enough. That works okay for blended/ processed recipes, tho not for other things.
