His reply was that it probably was the best diet, but he felt that most people would not follow it. So with his food plan he felt he could convince more people. I keep forgetting about how long the transition was for me, and how many transitional steps there were between the fried potatoes and fried meat days of my earlier life and now. Each transitional phase was almost too much for me. Yet after years of that step, it became " normal " , and I could consider one more major shift towards a healthier diet. Its not just the diet and physiological shifts that happen as you body has to adapt to a radically different diet, there is a cultural transition with each shift to adapt to also. Many people truly choose to die rather than stop eating the diet they were raised on because the psychological programming about it is so strong. Transitional steps are usually essential for shifting this programming. I suspect very few people go straight from a fried potatoes and fried meat diet to a raw vegan diet, and so without these diets for the in-between steps, very few people would ever make a huge single step transition. Dr. McDougall is one of many who are helping to provide paths for people to travel as they learn to be healthier. Its really kind of odd to think that at one time I thought the cooked food vegetarians were way out on the fringe, and now they look like part of the mainstream, and still a long ways away, but I'm on the other side of them now.
