Most of us want to avoid hot cooking in the summer heat — but we still want great food. Meanwhile, some people have turned away from cooked food for deeper reasons. Some have moved toward raw and whole foods to fight cancer, high blood pressure or obesity. For others, it's a philosophical extension of an attitude about diet and environment. Can the summer gourmet learn from the approach? Of course. Kelly Serbonich, co-author of Healthful Cuisine and a cook at the famed Moosewood Restaurant in Ithaca, believes (as many in the raw foods movement do) that consuming raw foods is better for the body. " When you don't cook foods past 115 degrees, the natural enzymes that help your body to digest those foods remain intact, " she says.
