They apparently use an old (100-year old) cider press to make it. It is unheated and unpasteurized, as the owner explained to me (they have a video of the process which you can watch). They also sell just the apples: currently they have organic Fuji and Braeburn for $1.00/lb and non- organic Galas for $0.60/lb. They keep these in a back room which is really, really cold.
