Some persimmons just never ripen, I haven't quite figured out why. If you bite into it and it looks creamy & opaque like orange sherbet, you can expect the starchy mouth-covering. If it's clear and jelly-like, you won't. If you do eat one that is not completely ripe, just eat nothing for a few minutes and the starch will roll off your tongue in little balls. It also helps to brush your teeth if you can. Nora ------------------------- Ok, I bought a persimmon. Beautiful reddish orange color, squishy, tastes like custard. Guest guest Posted January 2, 2008 Report Share Posted January 2, 2008 Hi Elchanan, Perhaps that's true with supermarket persimmons but I don't pick them unless they have lots of color. 90-95% of mine ripened well. Of the ones that didn't, there doesn't seem to be a pattern, like coming from the same tree or anything. I picked from 10-12 different trees, which were all at least a few miles apart. I store them in a room that stays very cool (45-60 degrees), and this seems to maximize ripening but there's still a small percentage that get squishy and wrinkled but not translucent. It seems to be unavoidable, unfortunately, unless you're lucky enough to be able to eat them ripe off the tree!
