Fact of the Day: fruit ripening When fruits ripen they undergo a series of changes that alter the way they look, feel, taste, and smell. These changes make fruits more enjoyable to eat, since they are softer and taste better. Unfortunately, the ripening process is difficult to stop and ultimately leads to spoiling. Fruit ripens by producing enzymes - catalysts that break down the sugar polymers and neutralize the acids. Production of the enzymes is triggered by production of a colorless, odorless gas called ethylene at the beginning of the ripening process.
