Can we clear up some confusion about BANANAS and REFRIDGERATION? I understand the skins turn BLACK in cold temps. In my experience this does not adversely affect the 'meat'inside the skin, as long as the banana has been RIPENED BEFORE HAND. When I was living in The Carribean it became neccessary to chill bananas. Here in the U.K I usually store them in the coolest part of the house to slow down spotting. _____ Yes, Kay, all that you say here corresponds with my own experience and understanding. I only refrigerate bananas when I wish to retard their further decomposition. The skins do turn black in the refrigerator, but the bananas inside seem to maintain their integrity fairly well, at least for a few days. I agree, though, must be ripe first, and also must have the skins intact. Here in California, I try to slow the ripening during the summer months and speed it up (add warmth) during the winter!
