Often, apples are harvested by cutting the stem so far down that it's difficult to see well. But where some stem is present, I find that, for the ripe apples, if I wiggle the stem it basically falls off the apple. Apples whose stems are woody brown or reddish heading in the direction of woody brown are ripe enough to eat in my kitchen, but there are some who would disagree. Also, AROUND the stem, you may find on many apples a radiating pattern of drier, brownish coloring. This seems particularly common on some of the green apples (Pippin, Granny Smith), but is also quite common, though less pronounced, on red apples. This is an excellent indicator of ripening, the apple is getting ready to fall from the tree.
