Hi Leslie, I feel young coconuts and coconut oil are two of the best foods we can include in our diet. I personally eat a spoonful of oil every day. I also use it as a lotion for my skin after a shower. It's also a great oil for massage. (I have coconut oil in my kitchen, bathroom, and bedroom!) In my research, I've come to the conclusion that raw saturated fat is a healthy food and neccessary for optimal health. It's found in every part of our body. (Cooked saturated fat is not so healthy.) Raw coconut oil is a true superfood. Young Coconuts and coconut oil are the only sources of saturated fat available on the raw vegan diet. Our body can make saturated fat, but I prefer to eat it. The best source of info on coconuts and coconut oil is found in " Eating For Beauty " by David Wolfe. Read the coconut oil chapter before making a decision on it's role in the raw vegan diet! I still prefer a much simpler, time-tested approach: 1. Is coconut oil a whole food? No (I'd probably stop right here...) 2. Is coconut raw? I'd say mostly, without checking to see how it was actually " processed " - somehow it got out of the coconuts, and I'm relatively certain that it didn't just " drip " there. and when all is said and done, it's still 100% fat...zero fuel, zero protein. 3. Is is eye-appealing? -- maybe; reminds me too much of lard... 4. Does it smell good? ok. 5. Does it taste good? - personal...not my fav.. 6. Is it found in Nature? no....it is not a fruit, a vegetable, a nut or a seed, or a sprout. It's processed from a nut... 7. Could I make a meal of it? no... If someone " prefers " , as Mike noted that he does, even knowing that the body can manufacture all the saturated fat it needs, coconut oil..... : ok and then as far as all the claims about " Superfood " , and one of the articles about its " antibacterial, anti-viral... " ...etc..etc... and the references to ancient Indian medicine, the references to various " cures " all do the same thing for me: nothing. I'm not interested in any " foods " that have to be " processed " to be eaten. Nature has supplied us in abundance with all that we need for nourishment, we don't need to " improve " upon anything. The idea that we need to improve upon what Nature has provided is at the base of why we are where we are as a nation healthwise. And one of the doctors cited who was touting it, also conveniently " sold " it...commercial link. I will only take in coconut oil, as food, with the coconut meat, which I rarely eat. In that form, it is good, on ocassion, IMO. I've had raw adult coconut meat and find it very tasty. Here, I note, that I agree with the raw ideal of minimizing fat intake to a low % of caloric energy. I posted the article more or less to dispel misunderstandings about saturated fat. There are different types, to be sure. OTOH, I will use raw coconut oil as skin " balm " due the damaging effects of my tap water to my skin. My personal experience with coconut oil as a skin balm shows me that it does help. We actually take in O2 thru our skin, and it seems to me the nutrients in coconut oil may help recondition the skin. I don't apply this oil very often, perhaps twice per month. Final analysis, for me: processed foods are not good for us. Whole foods, as you note, are optimal.
