Thanks for asking as I wanted to correct a typo in my original post show have

read 100 grams (about 4 ounces) has 34% of the RDA for iron.

 

I was very close emotionally to my maternal grandmother and I read about the

high iron content of the green just before my grandmother reminisced about her

childhood and when she was eating parsley by the handfuls. I asked her, " Her

age at the time " and she said 11-12. It made sense to me as that is the time

of menstruation (now anyway).

 

A good way to learn to like or to add a new item to our okay category is to

take a small sample at the produce dept. or stand once in a while. I used to

eat the garnish on the plate at restaurants (as a breath freshener?! LOL) It

is often the best (nutritionally speaking part of restaurant food LOL parsley

or kale...) another way is to buy some and chop it up use in Tabouli

(mid-eastern cuisine) or salads or soups or pesto (it makes the expensive and

strong

flavored basil more affordable and easier to handle / digest)

 

It will keep longer if you cut the stems when you get home and place in a jar

of water in or out of the refrigerator.

 

My inspiration for the last few years has been a conversation with mono meal

Dr. Doug Graham. He told me at the 2001 International Raw and living Foods

Festival that he once made a meal out of just cilantro!! So far I have made a

snack out of it...Often my meals are fruit... I wait 20 minutes or more and

then eat lettuce or greens.

 

I find personal heart-to-heart sharing intense but important. When I travel

now (very rare though) I try to stay with Living food or raw friendly people.

It is so much better so far then staying in hotels... I learn so much and I

guess it has replaced " going to restaurants "
