I just bought my first vanilla bean today. I was expecting some kidney-bean shaped thing but instead it looks like a licorice stick. How do you prepare and store it? How long does it keep? Can one dehydrate it, grind it up then use as a spice? _____ I'm not an expert on these, but I do know a couple of things: 1. Do not break them open until you are ready to use them. Then slice the pod lengthwise, as if you were going to remove peas from a pod. 2. Take a spoon, something not sharp, and gently scrape out the beans from the inside, this is the part you will use. 3. Blend or mash into whatever you are making. 4. Eat! Eat! If you open one, you'll see right away that it does not grind at all. I have never seen these dehydrated. Physically you can dehydrate anything, but I don't know how that would turn out. And the best storage is in the pod, probably refrigerated, wrapped airtight. Check with your produce manager, may have some ideas, of Google on the topic and share what you learn with the rest of us!!
