I can't think it is useful to us - surely it takes more energy than it gives? Ok in a juice maybe, but if you try juicing it alone I bet you wouldnt like it..? Or even get much juice out of it. Maybe it was intended for cows.. or even buffalo Edible weeds are dark scrumptious and soft. If you cant forage them, see if your local health store can get some in. I buy it fresh in packs, locally grown. I would be interested with Elchanon's view on buckwheat and sunflower greens? I find them pretty soft - esp' the buckwheat greens. They are easy to grow in the summer and I live in a flat. You dont need alot to add to a salad - tastey and nutritious. I am sure that these little shoots are like those that show up in nature for us to forage along with wild weeds and herbs? I am not so mad about the idea of eating watercress; maybe that was intended for frogs or something?.. I think kale is best left for cooking.
