Leaf lettuce (red/green), romaine, butter, bibb, etc. Also in the forest, " miner's lettuce " is quite nice, if you recognize it! The harder greens are kale, chard (but not all chard), and so forth. These contain more nondigestible fiber and require more digestive effort in the system. However, they are also quite nutrient rich.
