Not only limes, but ALL citrus and all peppers are unripe when they are green. To my knowledge there are no exceptions. Note that there is no such thing as a " green bell pepper, " As I posted awhile back, the only true bell peppers are red, orange yellow. Green are simply unripened red, orange, yellow bells. That's why they are so acerbic, and cheap. Two full harvests per one of the ripe bells. Consumers expect limes to be green and thus they are picked green.
