Whether or not you are buying organic products in general (yet?), PLEASE buy only organic lettuce. Almost 100% of the US lettuce supply is known to be severely contaminated with perchlorate. Perchlorate is a byproduct of burning jet and rocket fuel. For years, the air force has been dropping this chemical (supposedly unknowingly, until recently) throughout the Colorado river basin where almost all the nation's nonorganic lettuce is grown. Both the plants and the underlying soil are contaminated. This chemical is deadly, there is presently no known way to break it down. The EPA released a report on this in 2004, so this is fairly recent information in terms of government reporting. (Known for a long time in some circles, but now it's " official. " ) 2. There is no such thing as a green pepper. A " green pepper " is merely a red, yellow, or orange bell pepper that has not yet ripened. By harvesting and selling the peppers green, the industry virtually doubles its production and sales per acres. However, as with all fruits, unripe peppers are not yet fully developed and do not have the nutrient composition or balance we need; they are rather acid-forming in our bodies, among other undesirable effects. Expanding this topic a bit further, to my knowledge NO green-colored pepper of any kind is ripe. Jalapenos, habaneras, sorranos, bells, ALL will ripen into a beautiful red-orange-yellow color (varying, of course, by the type of pepper). 3. Even though peppers are fruits, they are not really well-designed for our biochemistry; they are not one of our species' " natural " foods. To explore, simply conduct the usual experiment (as with onion, garlic, salt). Eat no peppers of any kind for a couple of months, then eat some. Then you'll know from your own experience and won't have to take anyone's word. I've been a raw vegetarian for three months now, and today my two mountain dogs got out of our city back yard and went exploring in the city. I 'bout had a fit! We finally found them before they made it to the freeway. On the way home my dh had picked up some chicken fingers and gravy and sat there eating while I hungrily unwound and watched him eat. In nervousness and hunger I nearly grabbed one and started munching. I went and fixed myself a jicama/tomato/avocado salad instead with honey mustard dressing. Whew, that was close! Tonite I made coconut, date, almond balls and had those with an apple.
