Diana,

 

I realize this probably tastes wonderful. However, it's not the best choice,

for several reasons, for day-in, day-out dining. Poor food combination

(fat/carb), extremely high in fat, extremely high in nondigestible fiber

(pecans). You also may wish to soak the pecans for a bit, to diffuse some of

the enzyme inhibitor in the outer layer. However, if you do this, you may

want to soak your dates less, to compensate. Any good food processor will

process the dates just fine, soaked or not. (Regardless of the other

ingredients, too much water obviously does not make much of a pie crust.)

Sure here's one: Alissa Cohen has one I love and it's sooo simple:

2 cups raw pecans

1/2 cup of soaked dates....

In food processor grind nuts until fine and add dates until well mixed.Then

pat down into a pie dish with your hands and fingers or use a small marble

pastry roller to help smooth out the mixture in the pie dish. Very tasty!
