We simply take what someone ate, or take some recipe, and analyze its nutritional content based upon data in the USDA nutrient database. At this point we focus primarily on caloric nutrients, the proportions of carb, fat, protein, though we can do some other analyses, as well. We find things that continually surprise people. For example, recently one VERY well known RF teacher, one who has inspired many people to try RF, published a recipe labeled " low fat. " We analyzed it and determined that it contains 61% of calories from fat. Hard to call this " low fat!!! " The teacher defended the recipe but may replace the term " low fat " with " reduced fat, " which is honest...the same recipe in its original form contains even more fat! The goal is to help people understand what they are really consuming. Most raw fooders consume one of the highest fat diets on the planet. As a result, they are undereating ALL water-based nutrients and may be somewhat dehydrated. That certainly appears to be the case quite often as we look closely at people's eyes. One more thing...when I say " we, " I mean primarily Laurie Masters. She's the one who has done the research and documentation, I participate in discussions, assessments, some research and interpretation, and of course some writing. Hope this helps!
