Until a thorough examination of just what happens in the stomach when the chewed up nut, along with its nutrients, is broken down, such claims are purely speculative, and, I think, fallacious. If there has been some study of this digestive phenomena, please enlighten me. I eat nuts without any soaking, and have no problem with them. The idea that " enzyme inhibitors " prevent the nutritional substances in the nut from being utilized by the body seems like nonsense to me. Do the enzyme inhibitors survive intact in the presence of hydochloric acid? I doubt it.
