"2500 gallons of water to produce a pound of beef" is already way too much water, of course, but I think PG & E is underestimating in this case. Sources have put the amount at 5000 gallons/lb, especially for California beef, and as much as 8000 gallons per pound (the latter number I saw on a sign in a San Diego science museum last year). This document from PGE has some amazing statistics. It takes about

2500

gallons of water to produce a pound of beef. Versus 23 gallons for a pound

of lettuce and 30 for a pound of tomatoes.
