But it was too good not to share.My office has had a great week with lots to celebrate (I work in the Oakland PETA office). My office also had a couple of donated chocolate bars sitting around. Endangered Species Extreme Dark Chocolate. These bars are *really* good, but so dark that they border on bitter. Almost like baking chocolate. So I made a s'more casserole.I had a tub of Trader Joe's vegan animal crackers, which taste similar to graham crackers. Kelle picked me up a bag of vegan marshmallows from Rainbow. I added some walnuts so it wans't a total sugar bomb. In a big bowl I mixed the cookies, 1 cup of chopped walnuts, and 3 chopped up chocolate bars. I put that mixture into a Pyrex casserole dish. Topped with the marshmallows, popped in the oven for 10 minutes at 400 degrees, and voila...a bubbly golden-brown melty chocolate pan of vegan goodness. It's a ridiculous thing to eat and I feel bad that I fed it to my esteemed colleagues. The collective sugar high was something to see. But it was so good! I think I'll make it for the next Vegan Food Party. If you have a party coming up, you might want to try it! The fact that it took 60 seconds to put together was pretty nice as well. Alexp.s.New food at Herbivore!! Last night Herbivore Berkeley was sampling new dishes with vegan beef. Philly Cheesesteak, BBQ beef sandwich, and 3 others.
