Many chefs love the challenge of coming up with something, and often will pull something amazing out of thin air using the fresh ingredients they have on hand. Foreign Cinema does this particularly well. I've been there twice (once for brunch and a second time for dinner), and on both occasions I had meals that left the meat eaters jealous. So my suggestion, if you're looking for fine dining in SF in a mixed diet situation, call ahead and ask if they can accommodate vegans, and ask what kind of things they might make for you. Many restaurants will sneer at the suggestion or have no idea what to do, but many will pull out the stops and cook something creative and delicious.
