Granny Incredible Spicy Soup With Garlic 4 large potatoes 2 14 ounce cans black beans 2 medium onions 1 tablespoon minced garlic 1/4 cup olive oil 1 cup white vinegar 1 teaspoon curry powder 2 carrots, chopped 1 16 ounce can whole kernel corn 1 16 ounce can chopped tomatoes 2 tablespoons hot pepper sauce In a large saucepan, cook potatoes in lightly salted water until tender. Drain and reserve 2 cups of the potato water. Drain black beans, reserve liquid. Place black beans, potatoes, and 1/4 cup of the reserved potato water in a blender, puree. In a large saucepan, combine puree, reserved potato water and bean liquid; simmer. In a large skillet saute onions and garlic in olive oil until lightly browned. Slowly add vinegar and curry to the onion mixture, continue cooking for 15 minutes. Add mixture to potato mixture. Add carrots, corn, tomatoes, and hot pepper sauce, simmer 30 to 45 minutes.
