Spicy Noodle Salad

 

12 ounces spaghetti

2 tablespoons sesame oil

1 1/2 cups carrots, grated

1 1/2 cups bean sprouts

4 green onions, chopped

1 tablespoon orange rind, grated

1/4 cup orange juice

1/4 cup tahini (optl)

3 tablespoons soy sauce

1 teaspoon granulated sugar

1 teaspoon hot pepper sauce

1/2 cup peanuts, chopped

1/4 cup fresh coriander, chopped

 

In large pot of boiling salted water, cook spaghetti for 8-10 minutes or until

tender but firm; drain and rinse under cold water.

Drain well and transfer to bowl; toss with sesame oil.

Add carrots, bean sprouts, onions and orange rind.

Combine orange juice, tahini, soy sauce, sugar and hot pepper sauce; toss with

spaghetti mixture.

Sprinkle with peanuts and coriander. Yields 4 servings.
