Guest guest Posted March 16, 2010 Report Share Posted March 16, 2010 Spiced Baked Beets 12 small beets 2 tbsps. olive oil 1 tsp. ground cumin 1 tsp. ground coriander 1/2 tsp. ground cardamom 1/2 tsp. nutmeg 1 tbsp. sugar 1 tbsp. red wine vinegar Preheat oven to 350 degrees. Brush a shallow (glass/ceramic) pan with melted butter or spray with vegetable oil. Remember that beets stain. Trim leafy tops from beets and wash thoroughly. Place in prepared pan, loosely tent with foil, and bake for 1 hr 15 minutes, until very tender. Set aside to cool slightly. Peel skins from beets. Trim tops and tails to neaten. Heat oil in a large pan. Add spices and cook 1 minutes, stirring constantly, over medium heat. Add sugar and red wine vinegar, stir for 2 to 3 minutes, until sugar dissolves. Add beets to pan, reduce heat to low and stir gently for 5 minutes, until beets are well glazed. Serve warm or cold. Makes 4 servings.
