Guest guest Posted March 12, 2010 Report Share Posted March 12, 2010 Spicy Tomato Sauce 4 large, ripe tomatoes 2 tablespoons clarified or melted butter 1 small onion, finely chopped 1 teaspoon finely minced ginger 1 fresh green chili, such as serrano, seeded and minced 2 tablespoons chopped fresh cilantro 1/2 teaspoon ground black pepper 1/2 teaspoon salt, or to taste Roast whole tomatoes over gas flame or under broiler until skins wrinkle. Peel and chop. Heat butter in saucepan or wok and fry onion and ginger until golden. Add tomatoes, chile, cilantro, salt and pepper. Cover and cook until the tomatoes are a thick pulp and most of the liquid has evaporated. Serve with rice, pasta, vegetable patties or over fried tofu. Makes 2-3 servings.
