Guest guest Posted March 12, 2010 Report Share Posted March 12, 2010 3 ears shucked corn 1/2 cup fresh lime juice (about 2 limes) 1/3 cup red onion -- minced 1/3 cup fresh cilantro -- minced 3 tablespoons white vinegar 2 teaspoons sugar 2 teaspoons ground cumin 2 teaspoons chili powder 1 15 oz can black beans -- drained Lime wedges -- optional 1. Prepare grill. 2. Place corn on a grill rack; grill 20 minutes or until corn is lightly browned, turning every 5 minutes. Cool. Cut kernels from corn; place in a bowl. Add juice and remaining ingredients; stir gently. Cover and chill for 1 hour. Garnish with lime wedges, if desired. Yield: 6 servings (serving size: 1/2 cup): Cal 98 (8% from fat); Fat 0.8 g (sat 0.1 g, mono 0.2 g; poly 0.3 g); Pro 4.7 g; Carb 22.9; Fiber 5.4 g; Chol 0 mg; Iron 1.6 mg; Sod 238 mg; Calc 36 mg.
