I have to admit it surprised me, as around here (midwest) the stuff WE call " chili " (or " chile " ) is a SOUP. What I had in NM seemed much more like a sauce with mostly the peppers and not too many other flavors of seasonings. I LIKED it, but I had my mouth " set " on maybe a little different flavor. However, I SEASON so many foods I make at home with the ground chile powder we bought in Santa Fe. I think it came from a place called " The Chile Shop " (http://thechileshop.com). Santa Fe was one of the most fascinating places I've ever been. DH and I stopped there on the way home from our road trip to see older daughter in Arizona. We were there just 2 days, and I SO want to go back and visit the area again! It's lovely! I don't know if I could handle the " double-hot " of a " Christmas " entree--with both red AND green chile on it! Best wishes to you! --Laura B., in Illinois Laura, Good to see you like NM chiles! What I'm finding if I go out to eat now that I have to ask if the chile has meat in it and one time I was trying to get a bean and cheese sopapilla with tomatoes and lettuce and chile, but both red and green chile had meat! I can't even fathom any NM dish without chile and sat there staring at the menu, tryign to decide what I could do! Finally I told her my dilema and she offered me salsa. Which worked better than nothing, but oh man if I ever had to live without my NM chile permanently I don't know what I would do. So, which did you prefer, red or green? Or " Christmas " (both)?
