Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/2 cup cayenne pepper

2 tablespoons cumin

1 tablespoon caraway seeds

1 tablespoon coriander seeds

1 1/2 tablespoons olive oil

Place the cayenne pepper in a small bowl. Place the remaining seasonings in the

bowl of a spice mill and pulse until you have a fine powder. Add the powder to

the cayenne pepper and drizzle in the olive oil, stirring constantly, until you

have a thick paste. Place the harissa in a small jar and float a layer of olive

oil on the top. Refrigerate. Use sparingly.

Makes 3/4 cup.

" Harissa is considered to be the national condiment of Tunisia. One cosmopolitan

friend of mine so craves it that she begs for a 'care package' of it when she

cannot find it in her local supermarket. This quick version is most assuredly

not authentic, but it will do in a pinch if you don't have time to prepare a

batch of the real thing. "
