Guest guest Posted January 29, 2010 Report Share Posted January 29, 2010 Pineapple Green Chile Quesadillas 2 flour tortillas cooking oil spray 1/3 cup (or more) of monterrey jack cheese, shredded 2 tbsps. pineapple tidbits well-drained, chopped 1 tbsp. canned green chiles, diced 1 tbsp. fresh cilantro, chopped Spray one side of two tortillas. Place one tortilla on an oiled skillet. Place cheese, pineapple, green chiles and cilantro on tortilla. Place another tortilla on this. Press down on tortilla to flatten. Turn when tortilla is lightly browned on other side. Remove from pan when cheese begins to melt. Cool before eating. Cut quesadillas into triangles and serve with ranch dressing.
