Guest guest Posted January 7, 2010 Report Share Posted January 7, 2010 New Mexican Refried Beans (quick version) Ingredients 1 can (15 oz.) pinto beans ir 2 cups fresh cooked 1/2 cup chopped brown onion 1-1/2 tsp chili powder 1 clove garlic, minced 1/2 tsp salt 1/4 tsp pepper 2 oz Monterey Jack cheese, shredded 2 tbsp butter or margarine Directions Mash beans with electric mixer or beat with potato masher. Stir in all ingredients except butter. Melt butter in skillet. Add beans and cook, stirring occasionally, until beans have thickened.
