Guest guest Posted December 28, 2009 Report Share Posted December 28, 2009 EZ Ranch Style Pinto Beans Ingredients 2 Tablespoons Oil 1 medium onion, diced 1/2 teaspoons garlic 1 medium green bell pepper, seeded and diced 1 Tablespoon jalapeno pepper, diced 1 medium Tomato -- diced 1/2 teaspoon cinnamon 1 can pinto beans (with liquid) 1/4 teaspoons Epazote (optional) Instructions Heat the oil in a heavy saucepan. Add the onion, garlic, and bell pepper. Cook until just soft. Add the remaining ingredients. Cover and simmer for 25 minutes. Serve warm. This makes 2-4 servings. Guest guest Posted December 28, 2009 Report Share Posted December 28, 2009 This recipe looks good, and I love all kinds of beans! I have a question about an ingredient: what is " espazote " , please? I have seen this a few other times in a recipe here and have seen it mentioned off and on, but I don't know what it is. I have not, to my knowledge, ever seen it in the produce section of grocery stores...if it's a dried herb, I've also not seen it in the herbs and spices aisle. I shop sometimes at a larger health food store that has bulk bins for herbs of all kinds and have never found it. Is it only regionally available? I am curious about it and wonder, if I cannot find that particular ingredient, what might I use as a substitute for it? Thank you for the information and for the yummy-looking recipe!
