2 eggs

1/2 C. dry bread

crumbs

1/2 C. chopped walnuts

1 medium carrot shredded

1/3 C. crumbed feta cheese

1/4 C. coarsely chopped onion

olives

4 sprigs fresh parsley stems removed

1 T. lemon juice

2 garlic

1/4 t. each salt and pepper

Add some red pepper flakes it you like

1 (15 oz) can chickpeas or garbanzo

beans rinsed and drained

5 whole wheat hamburger buns

 

In a food

processor combine the first 11 or 12 ingredients if using red pepper

flakes, cover and pulse 4 times. Add

chickpeas; pulse until chopped. Refrigerate for at least 45

minutes.

 

Shape chickpea mixture by 2/3 cupfuls into patties. Grill on a George

Foreman grill or the BBQ grill. Coat grill

rack with cooking spray before starting the grill. Grill burger covered

over

medium heat for 3-5 minutes on each side Serve on buns with your favorite

toppings.
