Guest guest Posted December 9, 2009 Report Share Posted December 9, 2009 I modified a recipe posted in another group (a Pressure Cooker group) and really like how it turned out. I am reading Eat to Live by Joel Fuhrman, MD and am determined to try his " eat green " plan at the first of the year. So, I'm trying new vegetarian recipes so I'm all set when it's time to begin. Pinto Beans (in a Pressure Cooker) 2 cups pinto beans (rinsed and rocks/sticks/bad beans removed) 5 cups water Cook on high for 20 minutes; let pressure release naturally (15 or 20 minutes). Drain beans and return to PC. Add: 1 15 oz. jar of Picante Sauce (or make your own Salsa) 1 15 oz. jar of diced tomatoes 1 4oz. jar of green chilies " Hot " taco sauce to taste Stir and enjoy. My pressure cooker was on warm, so it warmed up the sauce in about 2 minutes of stirring. I didn't cook it for any additional time.
