Guest guest Posted November 10, 2009 Report Share Posted November 10, 2009 Sweet Potatoes with GArlic, Onions and Tomatoes 2 onions, chopped 2 tablespoons extra virgin olive oil 2 garlic cloves, crushed 3 tomatoes, peeled and chopped 1/2 teaspoon ground ginger 2 pounds sweet potatoes, peeled 2 to 3 tablespoons chopped cilantro salt and black pepper I added a pinch of cayenne pepper to spice them up In a large pan, fry the onions in the oil until soft. Add the garlic, and when the aroma rises, add the tomatoes and ginger. Cut the sweet potatoes into 1-inch cubes,and put them in the pan with the cilantro. Add about 1 1/2 cups water, or enough to half-cover the potatoes, and season with salt and pepper. Cook, uncovered, for 15 minutes, until the potatoes are tender and the liquid has almost evaporated, turning the potatoes over once.
