Chilaquiles (Latin recipe)

If you are vegan make and don't use the eggs.

Chilaquiles

 

1 tablespoon vegetable oil

4 (6 inch) corn tortillas, torn into strips

1 small onion, diced

1/2 tomato, diced

2 serrano or jalapeno chile peppers, minced or finely diced

salt and pepper to taste

4 to 6 eggs, lightly beaten

 

Heat the oil in a medium skillet over medium heat, and fry the tortillas until

lightly browned and crisp.

Mix the onion, tomato, and serrano chile peppers into the skillet. Season with

salt and pepper. Continue to cook and stir until onions are tender.

Stir the eggs into the skillet, and cook until firm.

Serve with beans on the side.

Thanks for posting this recipe. I have all the ingredients and want to try it

for Friday night dinner.
