Thai-Bangkok Tofu Bean Burgers With Peanut Cilantro Sauce

 

1 pound firm tofu

2 cups cooked or canned black beans, well drained

3/4 cup quick cooking oats uncooked

1/2 cup red onion, finely chopped

1/2 cup carrots, finely grated

1 teaspoon 1 tsp grated fresh ginger root

2 teaspoons tarmari or soy sauce

2 teaspoons packed brown sugar

2 cloves garlic, minced

1 teaspoon red pepper, up to 3, flakes

vegetable oil

flour for dusting

1 slice peeled cucumber

 

Squeeze tofu in paper towels to discard excess water. Mash tofu in a large bowl.

Add rest of ingredients except for oil, flour, and cucumbers. Mix well.

Lightly brush both sides of patties with vegetable oil and dust with flour.

Brush gill rack with oil. Cook over medium-hot coals about 4 minutes on each

side.

Serve on toasted buns and top with Peanut Cilantro Sauce and cucumber slices.

 

Peanut Cilantro Sauce: 

 3 tbsps. natural crunchy peanut butter

3 tbsps. fresh lemon juice

1/4 cup fresh cilantro, minced.

In a small bowl, blend peanut butter and lemon juice. Mix in cilantro to

combine.

Wow, this sounds amazing!  I don't grill, so I guess these could be pan-fried,

yes?  I just adore Thai food!

 

I should introduce myself.  I'm Angela, and I've been a member of this group

before.  (I only left because I was trying to reduce my groups, but I

missed this one so I'm back.)  I'm a vegan, again, since 1 Oct.  That's of

course World Vegetarian Day, which was actually a complete coincidence...or was

it?  LOL!  I've been a vegetarian off-and-on since I was 13, and a recent

viewing of PETA's latest investigation into Land 'o Lakes and their treatment of

cows made me determined to go vegan again and stick with it.  Already I've

dropped a few pounds, gained more energy, and have much clearer sinuses and less

allergy troubles, not to mention my conscience is clear and I know I'm following

the right path again.

 

I don't have any great new recipes to knock your socks off, but hopefully soon

that will change.  :-)  Anyway, thanks again for having me!
