Donna Cuban Cigars 3 cups mashed potatoes 1 large tomato, seeded and diced 1 can (15 oz) black beans, rinsed and drained 1/2 onion, chopped finely 1/3 cup cilantro or parsley, chopped 2 cups cheedar or Jack cheese,shredded(I used soy) 1/2 cup salsa of your choice 1/2 tsp. cumin dash cayenne dash red pepper flakes 1 tsp. chili powder Optional-jalapeno pepper, minced 1 dozen 8-inch fajita size flour no lard tortillas Garnish is optional sour cream slices olives, drizzle of salsa chopped green onions & tops Preheat oven to 425 degrees and spray a 9X13-inch baking pan. In a large bowl mix mashed potatoes,tomato,cilantro, onion, black beans, cheese, cumin, cayenne, red pepper flakes and chili powder. Soften tortillas in microwave, or in steamer.(I flip them a few times over the stove flame but be careful if you aren't used to doing this). Fill each tortilla with 1/3 cup of mixture, spoon a little salsa on the mixture and roll up. Place the seam side down in the baking pan. Spray tops of tortillas with cooking spray or brush with a little melted butter or margarine. Cover pan with foil and bake 15 minutes. Remove foil and bake another 10 to 15 minutes. Now you have your Cuban Cigars. You can garnish the dish when done with a drizzle of salsa, chopped green onions, sliced olives and sour cream if you desire.
