Portuguese Piri Piri Sauce

8 large red piri piri -- or jalapeno chiles

1/3 cup olive oil

1 cup tomato passata

1 teaspoon dried oregano

juice of 1 large lemon

1 pinch chili powder

salt and freshly-ground black pepper

 

Put the chiles and oil in a blender and blitz to a smooth paste.

 

Transfer to a pan and add the passata, oregano, and lemon juice. Bring to a

boil, then simmer for 10-15 minutes.

 

Add the chili powder along with salt and pepper to taste.

 

Makes 1 1/2 cups.

 

The burning question is: is piri piri a sauce or a condiment? In Brazil it

brightens up every dish, it seems, so this sauce also has a rightful place in

the New World section of this book. However, in Portugal, where I am sure many

people first taste it and where it accompanies countless [2 sea favorites], it

is every ubiquitous and popular.

 

Piri piri sauce, so called after the chile of the same name, is enjoyed in lots

of Mediterranean countries served right from the bottle; perfectly acceptable

you may say, but in no shape or form a match for the freshly made,

preservative-free version here. It will keep for up to a month in the

refrigerator.
