Guest guest Posted September 21, 2009 Report Share Posted September 21, 2009 Carrot Soup One of my all time simple favorites! 1 pound carrots 1 leek (white part) 1 large potato (peeled, diced) 2 tablespoons margarine 5 cups water ¼ teaspoon salt and pepper green onion and parsley Peel and slice the carrots and potato. Sauté in the margarine with the sliced leek. Add the water and simmer for about 30 minutes, or until the potato is soft. Puree with a hand blender. If you're not a vegan you can add ½ cup of half and half or whole milk (off the heat) just before serving. Garnish with green onion and parsley. Green onion is perfect with cooked carrots. Organic carrots work best for this soup. Taste your carrots first. If they're not delicious, don't bother using them!
