Lime Vinaigrette

Lime Vinaigrette

 

3 tablespoons fresh lime juice

1 1/2 tablespoons champagne vinegar

2 teaspoons grated lime zest

1 tablespoon minced garlic

2 tablespoons chopped cilantro and/or mint

1 teaspoon chopped, seeded Serrano chile to taste

1 1/2 teaspoons toasted ground cumin

3 tablespoons olive oil

salt to taste

ground black pepper to taste

 

Whisk all of the ingredients together. Can be stored covered in the refrigerator

for up to 3 days.

Makes about 1 cup.
