Guest guest Posted September 12, 2009 Report Share Posted September 12, 2009 Spicy Garlicky Hot Black Beans and Tomatoes cooking spray 1 teaspoon olive oil 3 tablespoons garlic minced 2 14 1/2 oz. cans whole tomatoes drained and chopped (I use the Mexican or Italian flavored or Rotel tomatoes) 2 15 oz. cans black beans and drained 1 small Jalapeno or Serrano chili minced 1/2 teaspoon ground red pepper 1/4 teaspoon fresh cilantro chopped fresh cilantro Coat a large nonstick skillet with cooking spray. Add olive oil and place over medium heat until hot. Add garlic and minced Jalapeno or Serrano pepper. Sauté until tender. Add chopped tomatoes, reduce heat and cook uncovered 6 minutes or until mixture is slightly thickened. Stir in beans, red pepper and cilantro. Cover and cook 5 minutes or until thoroughly heated.
